Meat free Monday: Kale, Tofu and Smart Carb Stir Fry
Admit it, we’ve all been there and indulged in weekend of excess; a few too many glasses of Prosecco, one too many squares of Green and Black’s with some late nights thrown in for good measure. But that is no excuse to abandon our healthy eating plans- just get back on track with this quick and healthy recipe!
Sometimes on a Monday we need to be kind to ourselves: first book yourself into a great fitness class to set yourself up for the week, then cook this delicious supper and wake up feeling smug on Tuesday!
(serves 2 hungry people or you could always make more and keep for a fab packed lunch)
1 large pack of Kale
½ red chilli, diced
2 gloves garlic, minced
½ red onion, chopped
Dash soy sauce, cayenne or chilli pepper to taste
½ pack tofu, diced
½ red pepper, seeded and diced
1 courgette cubed
Large handful of pine nuts
To serve: quinoa or brown rice, or barley, chopped avocado, for non vegans 2 hard boiled eggs.
Lightly fry all of the ingredients for 12 minutes in olive oil in a frying pan and it’s done-easy peasy!
